The hills of Kolympari.
The company Kolympari was originally founded in 2000 by the Mihelakis family, who have been active in the production and the trade of olive oil since 1980. The scope of Kolympari is the production and standardization exclusively of extra virgin olive oils, as well as olive oil with the protected designation of origin (P.D.O.) KOLYMPARI, HANIA, CRETE produced under the constant and strict control of the Ministry for Agricultural Development, which ensures full compliance with E.U. legislation and, thus, guarantees the production of supreme quality olive oil.

The production of olive oil is conducted by means of natural methods in our own modern oil presses under strictly observed low thermal and sanitary conditions, while the time between the harvesting and the crushing of the olive fruit is reduced to minimum, so that its nutrients, its golden green colour and its fruity taste are not altered.
The olive oil is stored in stainless tanks with a capacity of 1,500 tons kept in a privately owned facility under monitored environmental conditions, so that its qualitative characteristics can be retained unaltered

The qualitative control is performed by modern laboratories recognised by the EU and the International Olive Oil Council (IOOC)

The oil presses.
Our company possesses its own olive oil bottling plant with a capacity of 1,500 bottles of 750ml per hour and 350 containers of 4l per hour, where all safety and sanitary regulations are met, so that we are able to offer a healthy product to the consumer.

Greek Salad with Olives

  • 2 firm tomatoes
  • 2 cucumbers
  • 1 medium-size onion
  • 1 green pepper
  • 5-6 black olives
  • 1.2 teaspoon salt
  • 100 grams fetta cheese
  • 1 teaspoon oregano
  • 6 tablespoons olive oil
  • 1 tablespoon vinegar

Wash tomatoes, cucumbers, parsley and green pepper. Cut all of them into pieces and put in a salad bowl. Add onion cut into thin rings and olives. Season with salt and oregano, pour over the dressing with olive oil and vinegar and mix. At the end place feta cheese on top of the salad
